Dotenabe

Ingredients:

1.5 cup fried tofu, diced
1 cup daikon radish, sliced
1 cup Napa cabbage, sliced
1/2 cup carrot, sliced
1 potato, diced
1/2 cup shiitake mushrooms, sliced
1/2 cup leeks, thinly sliced
3 TB sake
6 cups vegetarian dashi
1/2 cup red miso

Directions:

Smear the miso all over the inside of a ceramic pot or small baking dish. Put all ingredients and dashi into pot and place over low heat for 30 minutes, during which time the miso will melt into the stew and the ingredients will cook. Serve in bowls and garnish with sliced boiled egg.
