GONFIT D'OIGNON
This sweet, jelly-like condiment may be prepared in advance, stored in the refrigerator up to several months, and used when needed as a convenient and jazzy accompaniment, or simply as a spread for sandwiches, breads, and hors d'oeuvres. Try adding a. dash of cayenne pepper to make it a little spicy.
1. Heat the vegetable oil in a saucepan over medium-high heat, add the onions, and cook, stirring occasionally, until golden, 4 to 5 minutes.
2. Add the red wine Vinegar and the grenadine and heat to a boiL
3. Stir in the sugar and continue to boil for an additional 10 minutes. Season with salt and pepper.
4. Pour the mixture into a hot, sterilized jar and seaL Refrigerate for at least 4 hours before serving.
