Moroccan Chickpea Salad
Ingredients •  1 stalk celery, diced •  1/2 yellow pepper, diced
1/2 red pepper, diced •  1 med. tomato, diced •  1 med. onion or 6 green onions, diced •  1 can chickpeas, drained (19oz) •  1/2 cup feta cheese( can be replaced with soy feta) Dressing •  2 tbsp olive oil •  3 tbsp red wine vinegar •  2 tbsp fresh lemon juice (about 1/2 lemon) •  1 tbsp fresh parsley •  1 tsp fresh mint •  1 tbsp & 1 tsp dried ground cumin •  salt & pepper to taste
Preparation
  • 1. Toss diced vegetables & drained chickpeas.
  • 2 . Stir dressing ingredients together. (Dressing will look thick and “muddy”)
  • 3 . Pour over veggies and toss.
Serve this recipe with a delicious, filling soup, like our Orzo Soup with Harissa and Chicken. Harissa is an incredible North African spice mixture that packs a lot of punch.
