Potato Korokke

Ingredients:

4 potatoes, medium size, peeled and chopped
1 cup ground beef substitute
1/2 onion, chopped
1 egg substitute
flour and panko for breading
salt and pepper to taste
chopped green onions, for garnish

Directions:

Boil potatoes until fork tender. Meanwhile, saute onion until browned and mix with ground beef substitute. Mash beef sub/onion mixture together with potatoes, adding salt and pepper to taste, until combined. Form small patties of the potato mixture, dredge in flour, shaking off excess, dip in beaten egg substitute, and then dredge in panko crumbs until covered. Deep fry in 350° oil until golden brown. Serve with tonkatsu sauce.
