Green Beans with Tomatoes

A summer-time favourite

INGREDIENTS

2 tbsp extra virgin olive oil
1 cup/210 g peeled, seeded and chopped tomatoes, well drained
1 1/2 lb green beans, cut into 1 in./2.5cm lengths
8 to 10 basil leaves, shredded with a few to garnish
salt and fresh ground black pepper

Heat the olive oil in a frying pan, add the tomatoes and cook for about 10 minutes. Add the green beans and a few tablespoons of water. Simmer for about 15 minutes, stirring occasionally, till the green beans are tender. Add the shredded basil and mix. Season to taste. Transfer to a heated serving dish, garnish with whole basil leaves and serve.
