Fudge

2 cups soaked cashews
1 cups pitted dates
1 cups raisins,
2 heaping tbsp carob powder
1/2 cups fresh pineapple juice
1/2 cups distilled water
1 cup flaxseed meal
1 cup chopped walnuts

*ensure that above ingredients have not been treated with sulphites or sulphur.

Drain cashews and put in blender or processor with dates, raisins, carob, juice and water. Blend into a thick paste. Stir in flaxseed meal and water. Press onto a cookie sheet covered with paper and freeze for 2 hours. Cut into squares and store in the freezer.
