Vegetable Curry

Hot, Hearty and Healthy

INGREDIENTS

1/4 cup vegetable oil
4 carrots, quartered
2 onions, sliced
1 tbsp hot curry powder
1/4 cup all-purpose flour
1 cup bean liquid or vegetable stock
2 cups canned or frozen lima beans
3 cups of cooked brown rice
3 cups cooked buckwheat groats
3/4 cup raisins
3/4 cup cashews
1/2 cup mango chutney

METHOD

Heat oil in a large skillet and saute carrots and onions 3 to 5 minutes. Stir in curry powder and cook 1 minute: do not burn

Stir in flour. Add bean liquid and simmer 15 minutes.

Stir in the remaining ingredients and simmer until heated through.

Serves 6
