Spinach-stuffed Potatoes

A tasty snack to have mid afternoon to keep the “hunger wolves” from the door.

INGREDIENTS

4 large baking potatoes
1 lb spinach or i pkge(10 oz) frozen spinach, cooked and chopped
1/2 cup of hummus
1/8 tspn nutmeg
salt & freshly ground black pepper to taste

METHOD

Bake potatoes in a preheated 400 F oven 1 hour or until soft.

Cut a slit in potatoes lengthwise and scoop out insides, reserving the shells. Whip the potatoes with spinach, hummus, nutmeg and salt and pepper until smooth.

Mound puree back into potato shells. Bake in a preheated 400F oven for 15 minutes or until potatoes are heated through.
