TOASTED POLENTA

Polenta crostini can be toasted over a charcoal fire, and served as part of a platter of Grilled vegetables.

INGREDIENTS

1 recipe Polenta, poured to a thickness of 2 inch and cooled

Unsalted hummus

To garnish: pitted olives, chopped tomatoes, thick tomato sauce, Ragu, or pesto

1. Preheat the broiler.

2. When the polenta is completely cool and firm, cut it into I-by-2-inch pieces. Place the pieces on a baking sheet and put it under the broiler for 3 to 5 minutes, until the polenta is crisp and a rich golden color. Do not let the pieces brown.

3. Spread the hummus on the crostini while they are still warm, top them with any of the garnishes, and serve .
