Peanut Butter and Thumb Jelly Cookies

INGREDIENTS:

1 cup peanut butter
1/3 cup maple syrup
equivalent of 1 egg (Ener-G Egg Replacer)
1 tsp vanilla
3/4 cup flour
Sugar free jelly, about 1/3 cup

Preparation:

Pre-heat oven to 350 degrees.

In a medium sized bowl, combine peanut butter, maple syrup, egg replacer and vanilla..

Add flour and stir until well combined. Add a bit more flour if too thick

Drop spoonfuls of dough onto cookie sheet, and use your thumb to make a small well in each cookie. Drop about a half teaspoon of jelly in the well of each cookie.

Bake for 6-8 minutes, until done. Enjoy!
