Herbed Quinoa

A delicious dish that includes red and yellow vegetables to round out nutritional balance.

3T extra virgin olive oil
1 large onion, chopped
1 small sweet potato, grated
1 stalk celery, finely chopped
2 C cooked quinoa (I cooked it with a veg bouillon and 1 tsp of dried basil as I had no fresh basil)
1/2 tsp Celtic sea salt
1T finely chopped basil (see note above)
1T finely chopped fresh thyme (leaves only)

In a large skillet, heat oil over med-low heat, making sure it never smokes. Saute onion for 5min. Add sweet potato and celery; saute for 10 min, or until onion is slightly browned. Add quinoa, salt, and thyme; toss until well combined.
