Provencal Beans

Tomatoes and Garlic transform plain beans into a memorable dish.

INGREDIENTS

1 teaspoon of olive oil
1 small onion, finely chopped
1 garlic clove, crushed
1/2 pound runner beans, trimmed & sliced
1/2 pound green beans, trimmed & sliced
2 tomatoes, peeled and chopped
salt and ground black pepper

serves 4

1. Heat the oil in a saucepan and saute the onion over medium heat until softened but not browned.

2. Add the garlic and saute for 1 to 2 minutes, the stir in the sliced runner beans green beans and chopped tomatoes. Season generously with salt and pepper, then cover the pan tightly with a lid.

3. Cook over fairly low heat, shaking the pan occasionally, for about 30 minutes or until the beans are tender. Serve hot.
